Born and raised in Anguilla, Chef Lester brings over 22 years of culinary experience to the Aurora Anguilla team.
Chef Lester's culinary journey began at the age of 18, where he started cooking at Maliouhana under the guidance of Michel Rostang. He then spent six weeks in France where he gained a deeper understanding of French cuisine. Afterward, he worked with a local establishment in Anguilla that specialized in serving food to young adults and the less fortunate.
In 2005, Chef Lester joined the team at Aurora (previously Cuisinart Resort), where he worked in various restaurants specializing in Mediterranean, French, Japanese, and Italian cuisine. He also represented Anguilla on the national culinary team, winning several awards for the island, including Best Seafood in the Caribbean and gold and silver medals in other competitions. Chef Lester now serves as the Executive Sous Chef at Chef's Table.
