With over three decades of culinary experience, Chef Rexford Fleming is a seasoned chef who has traversed the realms of fine dining both locally and internationally. Chef Rex, as he is affectionally called, is currently Executive Chef at Ocean Echo on Meads Bay Beach, where he began service in 2022. He is committed to skillfully crafting culinary experiences that excite the senses.
Chef Rex’s journey began in 1985, straight out of high school, at Anguilla’s Malliouhana. Venturing forward, he became one of the pioneering cooks at Pimms Restaurant at luxury Anguilla resort, Cap Juluca in 1987. During his 12-year tenure at Cap Juluca, he ascended the ranks from line cook to Executive Sous Chef. It was here that he honed his skills and participated in the Caribbean Culinary Competition, clinching one silver medal and two bronze medals in the Bahamas.
Eager to expand his culinary horizons, he seized the opportunity to enrich his expertise at the Culinary Institute of America in New York, delving into advanced techniques and food costing strategies. Additionally, he embarked on a month-long sojourn with Eclipse Restaurant in Beverly Hills, Los Angeles.
In 1999, Chef Rex ventured into entrepreneurship. He founded Anguilla restaurant Sapphire, and the pioneering Flavors Restaurant, leaving an indelible mark on the local dining scene. His journey led him to Altamer Resort in 2004, where he assumed the mantle of Executive Chef.
Even during the off-season, his passion for culinary exploration remained undeterred as he ventured to France, immersing himself in the finesse of Michelin-starred Bistro Gourmand Clovis Restaurant in Tourrettes-Sur-Loup. Chef Rex is also well known for curating gastronomic experiences in many of Anguilla’s most luxurious, private villas, including Santosha Villa Estate, Long Bay Villas, Sea Blue, Le Blue, and Moonraker.
