Yannick’s culinary journey began at home with his Anguillian mother and French chef father, the proprietors of Laveranda restaurant.
They instilled in him a profound appreciation for quality cuisine and a strong work ethic.

After completing culinary studies at the Hong Kong Culinary Academy where he received a diploma in Hotel Culinary Management, Yannick honed his skills at renowned establishments such as Caprice at the Four Seasons Hotel, mastering the art of pastry under Michelin-starred chefs. His culinary prowess expanded in London, where he refined his craft at prestigious venues like the Mandarin Oriental Hotel working for the likes of Michelin-starred chefs Daniel Boulud and Heston Blumenthal.

Currently, Yannick works as a Sous Chef at Raffles at The OWO hotel in London, leading the culinary team at Saison by 3 Michelin-star chef Mauro Colagreco. His dedication to utilizing fresh, local ingredients and employing simple yet elegant techniques reflects his passion for Anguilla’s cuisine. Yannick eagerly anticipates contributing to the island’s culinary growth, including its celebrated Anguilla Culinary Experience.
