Alfonso Di Lorito is the Bars Manager for Zemi Beach House on Shoal Bay East in Anguilla. His passion for mixology was sparked in a London speakeasy, where he first witnessed cocktails presented with a level of storytelling and precision he had never imagined. Driven by an immediate connection to the craft and despite not speaking English, he left Italy to move to London. Determined to improve and earn a place behind the bar, he rose from a humble barback to a bartender at the prestigious Aqua Shard, under Luca Missaglia, within a year. For Di Lorito, “it was not just a job, it was the beginning of a path I knew I wanted to pursue fully.”
Di Lorito further refined his leadership and operational skills as Bar Supervisor at London’s The Ladder Shed within the Chiltern Firehouse Hotel and Head Bartender at Amazónico, before returning to Milan, Italy, to launch Altrimenti Mixology Art as Head Mixologist. He reached Bar Manager for the first time at AlUla, Saudi Arabia, within the UNESCO World Heritage Site in Hegra. There, he worked alongside a Michelin-starred chef to develop a beverage experience connected to the region’s cultural and historical identity. After a stint as Beverage Manager at Novikov Ibiza, Di Lorito was named Head Mixologist at Sumosan Courchevel in France. He joined Zemi Beach House in 2025.
At Zemi Beach House, Di Lorito oversees a sophisticated beverage program across the resort’s Bohio Lounge, the Beach Bar, the Stone Bar, and its renowned Rhum Room. There, he creates personal curated experiences that celebrate rum heritage while reflecting modern luxury hospitality. For Di Lorito, “A great drink should create a moment—something that slows time, invites presence, and connects the guest to the place they are in. My goal is to evoke emotion, whether it is comfort, curiosity, or discovery. Even a simple drink, when crafted with intention, can become an unforgettable moment.”
Di Lorito holds a WSET Level 2 Award in Wines and Spirits, placed second in the United Kingdom’s Waqar Pisco and Italy’s Bargiornale competitions, and qualified for the prestigious Diplomático Artisans of Taste. When he isn’t refining menus or mentoring his team, Di Lorito finds inspiration through travel, photography, and the freedom and unpredictability of snowboarding, reminding him to embrace both discipline and spontaneity: “qualities that influence my creativity behind the bar.”
